Low-Carbon Diet: The Easiest Waffles Ever!

A Counsel On Oats...
A tough, old cowboy once counseled his grandson that if he wanted to live a long life, the secret was to sprinkle a pinch of gunpowder on his oatmeal every morning.

The grandson followed this counsel religiously and lived to the age of 110. He left four children, 20 grandchildren, 30 great grandchildren, 10 great great grandchildren and a 50 foot hole where the crematorium used to be.

Okay, it's a terrible joke, but we'll make up for it with a fantastic waffle recipe. The main ingredient is the highly nutritious oat. Forget the high-sugar, highly processed and transported boxed mixes - with their artificial additives, preservatives and flavourings - try out the real thing. Extemely simple to make, very tasty, very healthy - and ultra-low carbon!

Ingredients:

  • 3c rolled oats
  • 4c cold water
  • pinch of salt
Blend the above ingredients on high until smooth. Pour into a large bowl and let stand in the fridge for one hour.

Make waffles: Depending on the waffle iron it takes 6 to 9 minutes to bake a waffle.

Serve with almost anything. Fresh fruit, preserved fruit, apple sauce, nut butters.

The mix above is a very tasty, simple base waffle. If you enjoy experimenting, you can add other items into the mix, like coconut, sesame seeds, sunflower seeds, or substitute some of the oats in the mix with another grain (eg. rye, corn, etc.).

Here's a bonus recipe idea to go with above:

Peanut Butter-Carob Spread

Ingredients:

  • 4T peanut butter
  • 2T honey
  • 1T carob powder
  • water
Place peanut butter, honey and about 1T of water into a cup and start mixing with a teaspoon. Add more water for runnier consistency if you wish. Add carob powder and mix well. This spread will last 4 days in the fridge.
