Low-Carbon Diet: Apple Muffins

It’s Thursday again, so time for another healthy menu addition - healthy for the planet, and the people in it!

We haven't had anyone respond to the recipes yet, but considering our web-stats I must conclude someone out there is trying them! Feel free to let us know how you get on, and the low-carbon cooks amongst you are welcome to send along their favourite receipes!

Ingredients:

  • 1c whole wheat flour
  • 1c white flour
  • 1/2c sugar (preferably brown)
  • 1/2c coconut
  • 1T baking powder
  • pinch of salt
  • 2T vegetable oil
  • 1c soy milk
  • 1t vanilla (optional)
  • 1 peeled and shredded apple
Mix the first six ingredients in a large bowl. Preheat the oven to 200'C (400'F). When the oven is ready, add the last four ingredients and mix quickly. If it looks like the mixture is a bit dry add more soy milk. Spoon into a greased muffin tray and bake at 200'C for 12 - 20 min. (The time varies greatly depending on the oven. Ovens with a fan will bake it in almost 10 minutes).

The muffins should be light to medium brown.

Not recommended to leave on the windowsill to cool - they've been known to go missing...
